Basics Fuirst Fish Fry
1 ½ lbs cod, scrod or flounder filet, cut into 4 portions
½ cup flour, seasoned with salt and pepper
2 eggs beaten with ½ cup milk
¾ cup bread crumbs or panko
¾ cup yellow corn meal
½ tsp kosher salt
½ tsp Basics Fuirst Chili Seasoning or 1/4 tsp cayenne pepper
Dredge in flour mixture, dip in egg mixture and dredge in cornmeal mixture. Pan fry in ½” neutral oil. Until golden brown outside and flakey inside.
Serve with Srirachi mayo or tarter sauce.
